Would it not be possible for me to mirror just CentOS 5 or CentOS 6 
only? Maybe even just a single architecture (without DVDs) to bring disk 
space requirements down?

I will email Bytemark to ask how much more I would have to pay to 
increase the disk space. I assume you are saying that I need at least 
200GB to start with.
