include the --noautoconsole option on your virt-install command

Did you open the VNC port in iptables in dom0?
Did you add (vnc-listen '0.0.0.0') in /etc/xen/xend-config.sxp?
Please consider adding a vncpasswd config item in your xend-config.sxp
