[CentOS] question about updates with centos 3.x / Upgrade to 3.5 for the updates or reinstall all servers with centos 3 ?

Yes that is correct
3.1-3.4 are only stages in the release of CentOS and they are dropped when
the next stage is reached.
Security updates may not work on previous versions so it is not possible
to maintain them and if you continue to use them it is at your own risk.
