A little more digging turned up this page showing what versions are available for different distros, including various Fedora and RHEL versions: <http://wiki.dovecot.org/PrebuiltBinaries> My own plan is to grab the RHEL5 SRPM (which from the package name seems to be 1.0rc15), the upstream 1.0 release tarball, and rebuild a new RPM with the released version 1.0.
