That's probably because your /etc/sysconfig/kernel contains:
# UPDATEDEFAULT specifies if new-kernel-pkg should make
# new kernels the default
UPDATEDEFAULT=no
Make the obvious change of "no" to "yes" if you want newly updated
kernels to become the boot default.
