[CentOS] CentOS 5.3 - changing display settings

Checked the /etc/X11/xorg.conf file...?
Maybe you could try to add:

  Section "Screen"
      ...
      SubSection "Display"
          Modes        "1024x768"
      EndSubSection
  EndSection
