Comparisons with gigabit networks seems a pointless given that most VPNs
will be used over the Internet which limits bandwidth, how fast is fast
enough?

The average small-to-medium business office will probably have a network
connection in the neighborhood of T1 speed or perhaps a somewhat faster
business cable connection, but these are slower than the slowest ethernet
or even WiFi connections.
