Thank you, it appears the folding is the term I should have used in my search.
Putting
set foldlevelstart=1
in the ~/.vimrc didn't seem to do anything
set nofoldenable
That in .vimrc works in the version of vim in CentOS 7 but allegedly it still will fold in some contexts
