I'd suggest getting your hands on the CentOS DVD/CD installation media or downloading the replaced rpms from a mirror somewhere and reinstalling them with rpm, with the proper option to install older packages (replacepkgs or something like that). Then when you've undone the mess you can run yum upgrade (make sure it's configured correctly) - to get back up to the proper newest CentOS versions...
