Edit /etc/grub.conf. Comment out the splashimage and hiddenmenu lines. Remove the 'rhgb' and 'quiet' options from the kernel argument list. On your next reboot you should see something useful once more.
If you only want to see it once in a while, I think hitting 'escape' during the boot sequence will show that screen.
