So implement greylisting. Had one server that was getting swamped during particularly heavy spam storms. Setup greylisting and the box has not broken a sweat since.
Also note that clamav runs faster than spamassassin, so run it first and discard viruses (don't reject - the sender is virtually always forged and you will just confuse some innocent party).
