Your experiences differ greatly from mine. What are you doing that can be directly attributed directly to SMP in the kernel?

SMP in linux is very mature these days, I have never run more than 2 cpu's but I know people who have had 4 ways up for a long time, and Redhat claims 8 ways are solid, and this was over a year ago.
Maybe you are using hardware that is not on the supported list?
