You won't have the latest desktop developments (udev, 2.6, Gnome 2.8, xorg, HW support) and desktop applications that some expect for a desktop.

When CentOS 4 will be released, most of this will be solved and there is less need to have the latest developments as the desktop really has matured the last year.
the fall back curve remains to be seen. In 12 months after RHEL 4 is released we could be looking at the RHEL 4 desktop the same way we (I) look at RHEL 3 today.
