Before I could at least kill gnome-panel on centos 5, however on centos 6 even kill -9 gnome-panel restarts it again.

GNOME Panel is a highly configurable launcher and taskbar for GNOME. It forms a core part of the default GNOME desktop.
It is being replaced in GNOME 3.0 with GNOME Shell, which only works with the Mutter window manager.
