The LVM How-To covers it fairly well. Once the LV has been enlarged just run ext2online against the filesystem to expand it to take up all space in the LV, no rebooting required.

There is no way to current shrink online volumes right now ... it was broken, and disabled by RH. This will be fixed when update 1 is released.
