Type 'yum remove mysql' and see what depends on it.  I'd guess something 
in the gnome-desktop group is bringing it in as a dependency.

How do I keep it out?

are you using dovecot (a POP/IMAP mail service)  ?  if not, remove it too.  ditto mysqlclient, however, removing that likely will complain about yet more dependencies.
