After all that, it was simply a case of going into nmtui and adding a WIFI connection.
I had tried that before, but it must have been before I moved the WIFI dongle to a different USB port.

I'm using a USB dongle which the kernel has recognised and provides me with a device. I can use that device to scan for available WIFI networks. What I can't do is configure a connection so that the server can connect to the the WIFI network.
