      Which part of the setup do you need help/info on? Hardware choice for hba cards? Network layout? Setting it up in CentOS?

As you know, if you can't find real use cases involving CentOS, you could look for those for redhat.

I just need to know if a CentOS 6 iSCSI target is stable for production because after reading this

"Setting up a Red Hat Enterprise Linux server as an iSCSI target is not
recommended. The example used in this section should not be used in
production, and is provided as an example which should only be
referred to for basic shared storage testing and educational purposes."
