I guess you're mixing different things in the same thread :
livecd-creator (from livecd-tools) package let you build live media,
that let you boot a system with a CentOS desktop, and then decide if you
want to transfer the currently running in ram image to HDD on the
machine (without any way to interact with packages selection)

Other install images like DVD and Minimal aren't built with
livecd-creator but directly from anaconda/lorax (and so not using the
same method nor any kickstart file), but are proper images you can use
to setup CentOS the way you want, including packages selection, and can
also be used to setup an internal mirror, setup through pxe/http/ftp/etc ...
