'Distros' of Mac OS X are bad news, even in hackintosh circles; most of the sites out there will recommend purchasing a retail OS X install set from Apple and then using the appropriate resources to get it to boot. As to resources, insanelymac.com, osx86.net, tonymacx86.com and initfinitemac.com are good resources for this sort of thing. It's off-topic for this list, though. Now talking about installing CentOS on a Mac (either native or on some virtualization solution like VMware Fusion) would be on-topic.
