Have you ever had a look at MailScanner ? ( http://mailscanner.info/ ), 
It lets you filter emails on content, run spamassassin, run anti virus 
scanners ( a fair few are supported ) and basically just works with 
Centos3.x

You can get a single RPM that will setup and install the lot of things 
for you.
