I think it is important that we pick a Wiki that has an active
developer community that is security conscious.
Here is a recent example of an exploited Wiki security hole:

As for which Wiki to choose based on that criteria, I
unfortunately don't have any further useful input yet.
Maybe when I'm half awake digesting tryptophan tomorrow,
I'll take a look at some of the Wiki choices... :-)
