[CentOS] How to launch disk druid ?

Hello to all, in my previous posts I explained some problem when 
transferring my system to a new disk.
Because the process led me to a new system being unbootable I would like 
to redo the whole process by creating the partitions and preparing them 
by myself (instead of relying on gparted to do the job automagically)

So, I didn't found how to launch disk druid (I want to avoid fdisk) - Is 
disk druid only available when installing CentOS ? Is there another 
fdisk alternative on text mode ?
