[CentOS] Jabber server?

Also here is a list of IM servers including several jabbering ones.
http://www.jabber.org/software/servers.shtml

You might have to rebuild them for CentOS (e.g. configure,make,make install).

Or maybe able to install one built for another Linux distribution like EL4.
