For example, commit=15 means that journaled data is commited to the drive very 15 seconds instead of every 5. If you're okay with this then it's not a big deal. Noatime is a performance tip usually good for webservers or virtual machines, or any other place where you may not care about recording file access times. Changing 'data=foo' mount options are something that must be examined and tested, much as changing the elevator options.
