    yum groupinstall "GNOME Desktop Environment"

or

    yum groupinstall "KDE (K Desktop Environment)"

or

    yum groupinstall "X Window System"


(the last will get you a barebones X, the first two will set up one or 
the other of those full featured desktop environoments)
