You might want to look at http://backuppc.sourceforge.net/.  It will 
keep a history of backups using compression and links to greatly 
increase what you can keep on line in a given amount of disk space and 
can do the backups with tar, smb, or rsync with options to run commands 
before and after.  And there is a nice web interface to browse and 
restore the backups.
