Have you run system-switch-mail and selected postfix?
Is postfix service running?
Logwatch is sending mail ok to another mail server on my install of
CentOS 5 with postfix. The only change I made was to add the line

MailTo = desired email address

to /etc/logwatch/conf/logwatch.conf.
