ERm...with Roy's suggestion about rc.local...do you have anything in
rc.local to messes around with iptables? You could be loading from
/etc/sysconfig/iptables only to have them all flushed away and replaced
with something else.
'grep -r iptables /etc' should show up the culprit if there is one.
