You will need a VM based solution. I don't know how good Xen will be in 5.1, but it's an option. I myself have been toying with the idea of a minimal CentOS 5.1 Xen install, no GUI just a small Dom0, and then running an Ubuntu DomU with GUI on 1 virtual console and Windows XP on another, possible a Fedora on a 3rd and keeping the VM images in raw LVM LVs that are allocated and managed from the Dom0.
