The toolbars, the icon sets, the layout and placement of widgets "brands" the particular window manager. And sure, if you want to be pedantic, the Gnome desktop is more than the window manager. Since this is a CentOS list, compare the default "Gnome" desktop (i.e., choose Gnome from the display manager) and the default setting has a couple toolbars, large window decorations, large fonts, etc.. On my 24" monitor it won't make much difference, but on my 1280x800 laptop it's wasteful.
