Reverse the logic in the test and consolidate further
#!/bin/bash
find ./ -maxdepth 1 -type d | while read FOLDER
do
if [ $FOLDER != "./not_this_folder_oh_no!" ]; then
<do some magic here>
fi
done
Or exclude the directory in the find command itself
#!/bin/bash
find ./ -maxdepth 1 -type d -wholename './not_this_folder' -prune -o
- -print | while read FOLDER
do
<do some magic here>
done
