[CentOS] Apache DocumentRoot

I just assumed that setting this in the httpd.conf to the expected
/var/www/html and making all my sites actual virtual hosts would
place any request made by ip in /var/www/html, but it goes to the
first vhost?

How can I get the above behavior?
