[CentOS] updating pandoc and converting to UTF-8

The page says: "If the version in your repository is too old, use the instructions below under All platforms"
Or upgrade to CentOS 7 maybe... it seems to have 1.12.x

iconv is/should already be installed...
  /usr/bin/iconv
