(And I don't see any such option in the kickstart documentation, which also suggests that it won't be present in the UI.) The supported configuration is to create two partitions, create a RAID1 volume from those, make that volume an LVM physical volume, and then any logical volumes in that VG will be backed by a RAID1 set.
