Are you saying you have an existing partition on the system(s) that you want to run the install against already have an encrypted partition?
Can't you simply tell it to ignore that partition, and manually add that partition after the system's built?

Yes, exactly.

Good point, this would apply to the home volume for example but the system root is also encrypted.
