I am currently using a combination of emacs-auctex and winefish, with the occasional usage of kile.
After a bit of experimentation I've found the program, its 'texmaker' from kbs-CentOS-Extra. Thanks everyone for your comments :)

AFAIK, though texmaker isn't a gnome app, but uses the qt toolkit.

I know I should not say this, but I find VIM with syntax highlightening a parted latex editor.
