I went to the CentOS documentation page (http://www.centos.org/docs/5/) looking for some documentation on 5.5 but was surprised there is nothing there post-5.2. Is there another place I should be looking?

Couple of things - Most of CentOS-5 is /5/ - the .2 and .5 only point at snapshots in time for the distro. Also, upstream have not updated most of the docs past 5.2 anyway.
Most of the docs that you can see online are included in the distro as the guides, so you should be able to install and use them locally.
