What is the function of the snare daemon? I just found it on a machine and never heard of it before.

Probably http://www.intersectalliance.com/projects/Snare/, which is the first hit on google when you search for "snare linux".
I don't think that it is included in CentOS - and looking at the file list at Sourceforge gives me the shivers: The kernel there is more than stone old and has several security problems.
So please check if the machine you have it running on does have a more recent kernel than 2.6.9-5.0.5.

Snare is an auditing system to register activity on systems. I prefer to use audit included on CentOS.
