yum remove sendmail yum install postfix

Use your favorite editor to fondle /etc/postfix/main.cf to suit your environment (it's well documented).

/sbin/chkconfig postfix on

Oh, you might want to do some testing before turning it on by default. :)

I might be old fashioned, but I'd rather wait for the toast to pop up than to wait for the toaster sending me an email. Reading mails while eating isn't healthy, anyway.
