Dag has spamassassin packages for RHEL3:

Also, the version that ships with RHEL (2.55) is unusable. I rebuilt my mail server and forgot to upgrade spamassassin, a day later the phone was ringing off the hook because there were a TON of false positives.

The spamassassin packages are super easy to build yourself. Just download the latest tar.gz file and rebuild it:

rpmbuild -ta spamassassin-XXX.tar.gz

(that's what I do...)

You did not update all of the relevant portions of SpamAssassin; when the stock source is built into a set of RPMS, you need to upgrade:

spamassassin spamassassin-tools perl-Mail-SpamAssassin

Your specific error indicates you did not upgrade the last RPM, the actual perl modules. I can't speak for the CentOS repository, but this is how it works "out of the box."
