Today I'm trying to install CentOS 6 boot using text mode, but I can't create custom partition layout because I can't find the custom partition layout menu. Where is manually partition setup in text mode install?
Please advice...

I'd probably boot to single user and use fdisk mkfs etc to configure the disk as you see fit, then reboot to the installer

If needed on a bare bones install, I setup my partitions first with Gparted, either the GParted Live CD, or the version included with PartitionMagic on the UBCD CD.
But you still need to access the Create Custom Partition Layout to make use of the partitions you have prepared ready for use. I generally only mount the root partition, SWAP and /tmp. Anything else gets mounted by my ALI scripts later on after the minimal Linux installation is up and running.

I had this with Fedora. IIRC you WILL need to use the GUI install option to be able to access the 'Create a Custom Partition Layout' option.

The limitations of the text mode installer, and the amounts of memory required to run both it, and the GUI installer, are listed in the Centos 6 release notes.

Or, you could just use Kickstart...
