I've started looking into iSCSI, and I'm wondering if there is an iSCSI target (I've found the initiator in iscsi-initiator-utils) that ships with CentOS, or if not, what the recommended target would be. I'd like to export either a partition or (preferably) a file-as-a-partition.

you might find this of some use : http://www.karan.org/mock/iscsitarget-0.4.12-4.el4.kb.src.rpm
there has been an update since i built that src.rpm, so look at massaging that new sources in and rebuild to suit yourself.
