I can think of 2 things... 1) Is milter-greylist installed? 2) You may have the socket file wrong. Check your milter-greylist configuration to see the name of the socket file.
Also, make sure that both spamassassin and greylistd are started before sendmail...

also I have always the same error when I restart sendmail

You need to restart the clamav-milter service as well before starting Sendmail.

Let me guess: you didn't start it. (Yes, sendmail won't do this for you.)
I see that you went to comp.mail.sendmail for your earlier SMTP AUTH question. Do yourself and others a favor and go to: fr.comp.mail.serveurs Your English ist just on the brink where one can't be sure if you really understand or not. This makes just for a frustrating experience for everyone. And add that ehlo output I mentioned to your request. And for CentOS questions go to the *French* CentOS list.

Are you sure you want to remove many of the default values being passed to milter by sendmail by this setup?

Recheck your sendmail.mc. You have a typo there.

There is no such socket file which Sendmail expects to talk through.

Check your configuration regarding theses services. Especially where the sockets are created by config, that the sockets are available after service start and that Sendmail is permitted to enter the directories with these sockets.
