I have a centos box with a few of these in it. Its shipped monitoring/alerting software needs X, and this server only has a console installed. Does anyone have any experience with or a suggestion on how I could monitor these cards with something 3rd party based that doesn't need a gui, or Java at that matter!

No idea, but you could start a Xvnc server and start these monitoring tools in this display, then connect to this screen time to time to check if your Inter controller is ok.
