ffmpeg2theora does a good job at converting the h.264 that modern quicktime uses into Ogg Theora.
VLC does a good job at playing just about any format.
You will need to make sure you have the right libraries if you build them from source.
For ffmpeg2theora (and probably VLC too) there is a static binary for Linux at the project website.
