Yes, you can do this. I have a CentOS box at home with two DVD+/-RW drives; one is a 16x dual-layer Liteon, and the other is an 8x single layer Liteon. In my case, the drives are this way because I have run across pressed DVD's and CD's that the 16x drive will not read, but the 8x drive will, and vice-versa.
K3b knows how to deal with multiple writers using selection and pull down boxes.
While you CAN use both at the same time, it will make you machine quite loaded if you do so. With DVD+ media (which needs growisofs (called by k3b) to work), burn-free is automatic, and will get quite a workout.

Backing up 500GB/month, man you should seriously consider a large tape drive.
Now for the questions, are you backing up the entire system? or just data? I cannot fathom 500GB a month on a (how did you put it) standard consumer level PC. If you are backing up the entire os then maybe you should consider just the data.

I have a similar problem, but in this case it's going to be 400GB per hour. Of astronomical observation data. Fortunately, the initial requirement is only a 24 hour window, and for that LTO is OK.

I have successfully burned multiple CD's - so in theory it should work providing that the box can be put into a quiescent state.
I have 160 gigs or so at home. I solved my backup problems by installing an extra 160G disk that is unmounted. I wrote a script that runs each evening, mounts the disk, and rsyncs the backup data. I will soon be changing it to use rsnapshot which will give me several weeks(maybe months) of historical backup. I'm in a position where I can keep a 3rd copy of the data rsync'ed to an offsite machine.
I deem this to be sufficient for my needs.
