I am included toward option 3.  EPEL is easy enough, and if you want to ensure
EPEL is available at first boot, one of the simplest ways is to just include
these lines in a kickstart file:

repo --name=epel --baseurl=http://mirror.steadfast.net/epel/6/x86_64/

%packages
epel-release
