OK, I should add:

I'm using the Mate desktop (from epel).

I've also discovered that pavucontrol works to control the sound,
while alsamixer and the mate volume control do not.

is there some way to have a single control that covers all the
devices/inputs/outputs, so I don't need to have both the mate volume
control AND pavucontrol both running (visible) at the same time?

Do you not know? Have you not heard?
The LORD is the everlasting God, the Creator of the ends of the earth.
He will not grow tired or weary, and his understanding no one can fathom.
