I have done a bunch of googling and have a better understanding of Odroid's choice of 1.8V UART and the basic unavailability of units at this voltage. Just looking for a CP2104 does not cut it, as they still manage to use 3.3V...
So I will just order the one from AmerOdroid. If I get another board, I will see about just getting the cable so I can move the converter between boards if needed.

The Odroid UART to USB cable detects the right voltage (3.3V (AMLogic, RockChip) vs. 1.7V (Samsung)) to take, so you don't have to worry about it. The connector itself allows to be used with single breadboard cables (pin diameter & pin distance), but I haven't found any cheap UART to USB adapters running at 1.7V.
Your statement is a little unclear to me. Are you saying that I CAN use a regular 3.3v adapter, as it detects it and works properly. Or are you saying, it detects the 3.3v and just does not work; that you have to use a 1.7v adapter?
